Don’t underestimate the power of tiny chia seeds. Jam-packed with omega and fiber these tiny gems are a nutritional and culinary wonder.
Like popular goji and acai berries deemed superfruits, chia seeds are considered a “super” food. A single tablespoon serving has just 60 calories. Chia seeds are loaded with fiber, omega fatty acids, calcium, antioxidants and protein, making them a perfect addition to any healthy diet.
But don’t just sprinkle, add them to your cooking and baking. Today I’ve baked Charli Cohen’s high protein muffin and flavoured them lemon and chia, and they are gluten free.

I use Doves gluten free self raising flour, replace the blueberries for grated fresh lemon rind and juice of one lemon, and add the chia seeds just as you would poppy seeds.
