This is a quick coconut chocolate mousse dinner party pleaser. Paleo or vegan diet followers, to grain-free and dairy-free peeps. And I’ve tested it on Mr, who claims it’s the best ever.
I melt my chocolate carefully. You must not over heat otherwise it will burn and you won’t get the best out if it. I once attended a chocolate workshop run by Lisa Clarke who is The Chocolate Tart. You’ll never abuse chocolate again after you’ve been her pupil for the day.
When the chocolate is completely melted and so smooth and silky, add the coconut cream, a teaspoon of honey and blend with an electric mixer. Cover and put on the fridge… Clearly labeled ‘hand-off, Mr Smith’.
Leave for an hour or so and server chilled in cutesy tea cups or espresso cups.
